To say that I love guacamole is an understatement. I’m obsessed with in. Growing up, my dad made THE BEST guacamole. Actually, he still makes it, but I don’t live with him anymore so I can’t have it on demand!
So, I had to come up with my own guacamole recipe. My recipe is super easy and so fresh tasting:
- Scoop out the flesh of two ripe avocados into a bowl and mash it up with a fork
- Mix in about a 1/4 cup of store-bought, fresh pico de gallo salsa (find this in the produce section)
- sprinkle a 1/4 to 1/2 tsp sea salt over top
- stir in the juice from 1/2 a lemon or lime
- mix it all up
- eat it on EVERYTHING! Especially nachos!
If you have any leftover (not likely if you’re me), put a layer of plastic wrap directly on top of the guac and then put another layer over the bowl and store in the fridge. If the top turns brown, just mix it up. Eat it within a day or two at the most.
Yep, it’s 7:30am and I’m seriously considering making this…Yum with an extra helping of yummmmy makes a perfect breakfast!

This is going to sound ridiculous, but I’ve never thought to add storebought pico! I always spend time chopping tomatoes and onions and cilantro and jalapenos. Jesus. I could have saved all that time! Thank you….seriously, I can’t believe I’ve never thought of that. That will be my new guacamole secret weapon.
I learned it by watching the guys at our local Mexican restaurants mix it in the table-side guac! CRAZY time saver! :)
