Tonight’s nachos were so basic but so yummy!
I used canned organic vegetarian (vegan) chili poured over baked blue corn tortilla chips.
The chips and chili were topped with some Daiya mozzarella (I would have preferred their pepperjack here, but I can’t find it locally – sad!)
I then heated it in the microwave for a couple minutes to heat the chili and melt the cheese.
A nice dollop of homemade guacamole finishes it off! (come back tomorrow for my ridiculously easy guacamole recipe)
Lightening fast, healthy, and tasty! Everything I want in a weeknight meal. I’ll have the leftovers for lunch tomorrow!
